Last weekend me and my mum made focaccia bread.It was probably the nicest bread I've ever tasted and it was homemade which made it even better. Focaccia is a Italian bread and is scattered with rosemary and herbs.The dough doesn't take a lot of time to make but it has to prove and cook for several hours.
Serves about ten people
You will need:
.500g strong white flour
plus extra for dusting
.7g fast action yeast
.6 tablespoons of olive oil
plus extra for brushing
.300ml warm water
.2 teaspoons sea salt
.2 tablespoons fresh rosemary leaves
How to make:
1.First brush a baking tray and the inside of a bowl with oil
2.Next sift the flour into a large bowl and stir in the yeast.Then make a well in the centre and pour in 3 table spoons of the oil with the water.Add in the fine salt and with the help of the wooden spoon,mix together until all the ingredients are well combined.
3.After that transfer the mixture to a lightly floured surface and knead for 10 minutes until you have a smooth and elastic dough.The dough should be soft,if it is really sticky add a little more flour.
4.Then fold the edges of the dough underneath to form a smooth rounded top.Place the dough in the oiled bowl and brush the top with a little more oil to prevent a crust from forming.Cover with cling film and leave to rise in a warm place away from drafts for 1 hour until doubled in size.
5.After the dough has proven slide it onto the oiled baking tray.Use your fingertips to make indentations in the dough while flattening it into an oval shape about 3cm thick,brush over a little oil and cover with clingfilm.Leave it to rise in a warm place away from draughts for 40 minutes until doubled in size.
6.Preheat the oven to 220 degrees/gas mark 7.
7.Once the dough has risen,gently press your fingertips into the dough to make more indentations.Tuck the rosemary leaves into the surface,sprinkle with the sea salt and drizzle 3 tablespoons of oil or over.
8.Finally bake in the middle of the oven for 20 minutes until
beautifully golden.Once cooked,allow to cool slightly on a wire rack.Serve it warm.
